Cheddar Mashed Sweet Potatoes

Ingredients
  

  • 2 lb. sweet potatoes peeled and cubed
  • 6 cloves garlic halved
  • 1/2 cup half-and-half warmed
  • 1/4 cup butter softened
  • 1 cup shredded sharp white cheddar cheese or Gruyere cheese (4 oz.)
  • 1/4 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper

Instructions
 

  • Place potatoes and garlic in a large saucepan with enough water to cover. Bring to boiling; reduce heat.
  • Cover and simmer 12 to 15 minutes or until tender.
  • Drain; return potatoes and garlic to pan.
  • Add half-and-half and butter. Mash potatoes.
  • Stir in cheese, salt, and pepper.
