Dutch Baby Pancake with Pear-Caramel Sauce

This is a delicious breakfast alternative when your standard go-to pancakes just don’t seem fancy enough.

  • 4 tbsp butter
  • 3 eggs slightly beaten
  • 1/2 cup whole milk
  • 1/2 Tsp vanilla extract
  • 1/2 Cup all-purpose flour
  • 3 Tbsp sugar
  • 1/4 Tsp kosher salt
  • 1/2 Tsp ground cinnamon
  • 1/2 Tsp ground nutmeg
  • 2 pears halved, cored, and sliced
  • pure maple syrup warmed


  • 1. Place 2 tbsp. Of butter in a 9- or 10” cast-iron skillet. Place skillet in oven. Preheat oven to 425 degrees Farenheit.
  • 2. Combine eggs, milk and vanilla in a medium bowl. Wish in flour, 1 tbsp. Of the sugar, and the salt until smooth. Remove hot skillet from oven; swirl butter to coat. Pour batter into skillet. Return skillet to oven. Bake about 15 minutes or until pancake is brown and puffed.
  • 3. Meanwhile, melt the remaining 2 tbsp. Butter in a large skillet over medium. Stir in the remaining 2 tbsp. Sugar, the cinnamon, and nutmeg. Add pears; cook about 3 minutes or until crisp-tender, gently stirring occasionally.
  • 4. Spoon pear mixture into center of baked pancake. Drizzle with maple syrup.
